Half watermelon
1 tblspn Gulkand
Kala namak
Ice cubes
Pudina leaves

Method
Deseed water melon place in a juicer jar. Add Gulkand and blend well. Pour into glasses add ice cubes. sprinkle kala namak. Garnish with Pudina leaves n lemon slice. Serve chilled.

Kadi Pakoda Without Curd

Ingredients
Besan 1 cup +1 tsp
2 chammach kati hui methi
Tamatar 3-4
Hari mirch 2
Adrak 1 tsp grated
Water as needed
Oil for frying + 1 tblspn
Jeera hing
Salt to taste
Red chilly powder
Dhaniya powder
Half a pinch
Haradhaniya for garnish

Method
Besan me namak, mirch, haldi, hari mirch, hari methi aur haradhaniya daal kar gaada ghol banaye. 1 pinch soda daal kar mix kare. Gram tel me pakodi tal kar tissue paper par nikale.
El kadhahi me oil garam kare. Jeera hing tadkaye. Ek chammach besan daal kar bhune. Tamatar, mirch aur adrak ka paste daale. Sachi sukhe masale daal kar oil separate hone tak bhune. Jarurat anusar pani daale. Boil aane par pakodi daale. 5 mins low flame par pakaye. Haradhaniya Se garnish kare.

Note:-
Mere ghar me Thursday day ko pyaj lehsun Nahi banta. Aap chahe to pakodi me pyaj daal skte h.

Rose Banana Lassi

Ingredients
2-3 ripe banana
250 gms dahi
Ice cup
Rose syrup according to taste
Walnuts 2 tblspn
Badaam flakes for garnishing

Method
Juicer jar me banana daal kar grind kare. Add sugar cubes, curd, rose syrup n walnuts. Whisk it for 2-3 seconds. Serve in the glasses garnish with badaam flakes.

Singhar ki mithayi / Sev Ki Barfi

सिंधी सिंघर जी मिठायी (Sev ki Barfi)

आवश्यक सामग्री
250 ग्राम अनसाल्टेड सेव
500 ग्राम खोया/मावा
1 कप चीनी
2 चम्मच दूध
कुछ बूंदें पीला कलर
1 कप दूध
3-4 बूंदें रोज एसेंस
10-12 पिस्ते, कटे हुए
10-12 बादाम, कटे हुए
10-12 काजू, कटे हुए

विधि

- एक नॉन स्टिक पैन में चीनी और डेढ़ कप पानी डालकर लगातार चलाते हुए पकाएं जब तक चीनी पूरी तरह घुल न जाए.
- फिर उसमें दूध डालें और जब मलाई की परत सा बनने लगे ऊपर तो उसे निकालकर फेंक दें.
- अब उसमें पीला रंग डालकर अच्‍छी मिला दें और आंच को धीमा करके उसमें सेव डालकर सावधानी से मिलाएं ताकि सेव टूटने न पाएं.
- थोड़ी देर बाद उसमें खोया और दूध डालकर मिला दें, जब मिश्रण गाढ़ा हो जाए तो उसमें हल्का सा गुलाब जल डालकर मिलाएं.
- आधे पिस्ते, बादाम और काजू डालकर अच्‍छी तरह मिलाएं.
- अब एक प्‍लेट या थाली पर थोड़ा घी लगाकर तैयार मिश्रण को उसमें डालकर फैला दें.
- ऊपर से बचे हुए पिस्ते, बादाम और काजू डाल दें.
- अब इसे ठंडा होने दें और जब यह पूरी तरह ठंडा हो जाए तो इसे चौकोर टुकड़ों में काटकर सर्व करें.

Method:-
Dudh boil kare usme khajur daale. Low flame par gaada hone tak or colour change karne tak cook kare. Ilayachi powder daale. Dry fruits daale. Serve hot or cold. Sprinkle pista flake at serving tym.

Chopped Methi leaves – 2 Cups (125 gms)
Curd – 1.5 cup (250 gms)
Besan – ½ cup
Oil – 1 tbspn
Ghee - 1 tblsn
Hing – 1 pinch+ 1 pinch
Jeera – 1 tsp
Haldi– ¼ tsp
Lal mirch powder – ½ tsp
Sukhi Lal Mirch – 1 (optional)
Hari mirch – 1 (finely chopped)
Adrak – 1 tsp (paste)
Salt to taste
Curry patta– 10 to 12 (optional)

Method-
Methi k patto ko achhe she dho kar chop kar le aur kisi thali me daal k tedha rakh de taki uska saara pani drain ho jaye. kadahi me oil garam karne rakhe jab oil garam ho jaye tab jeera aur hing daale. Fir usme haldi, Hari mirch aur adrak paste daal k bhune. Ab usme methi daale n achhe se mix kare. Ek cup pani daal k pan ko dhak de aur methi k naram hone tak low flame pe pakaye.
Tab tak ek bade bowl me dahi daal k math le. Fir dahi me besan daal k lumps khatam hone tak mix kare. Fir 3-4 cup pani daal k patla ghol ready kare.
Ab methi ko check Kare agar methi soft ho gyi ho to usme dahi besan wala ghol daale n lagatar ghumate rahe jab tak ki kadi me ubal naa aa jaye. Ab kadi me Namak daale. Gas ko medium flame pe rakhkar 10-15 minute tak cook kare.
Ab ek tadka pan me usme 1 tblsn Desi ghee daale usme kadi patte, sabut sukhi Lal mirch, thodi si hing jeera aur lal Mirch daal k tadka lagaye.
Mouth watering methi kadi taiyar
Serve wid roti or rice. :-)

1 pinch ilaychi Powder
1/4 cup Nariyal Bura
1/2 cup Cheeni Ka Bura
Chocolate balls sajane k liye
1/4 cup thick malayi
Thode Se kharbuje ke beej

Method
Kadhahi me ghee garam kare. Besan daal kar golden hone tak bhune. Kharbhuje ke beej, ilaychi powder aur cheeni ka bura daal kar kuch der chalaye. Flame off kar de. Greased thali me daal kar ek samaan failaye. Malmal k kapde se dhak kar 1 hrs thanda hone de. Gaadi malayi me nariyal ka bhura aur 2 tsp cheeni ka bhura milaye. Is cream ko besan barfi par achhe se failaye. Coloured sprinkles aur chocolate balls se decorate kare.

Ingredents
paneer 250 gms
tamatar 3-4
shimla mirch 1 Big or 2 small
Adrak 1/2 tsp grated
1 harimirch
10-12 Badaam (soaked in hot milk for 30 mins)
salt to taste
dhaniya powder 1 tsp
haldi pinch off
pavbhaji masala 2 tsp
cream 1/4 cup (optional)
water as needed
oil 1 tblspn
butter 2 tblspn
kasuri methi 1 tsp
Honey 1 tsp

Method:-
Chop shimla mirch in cubes (use half n save half for later). Heat oil in kadhahi add half chopped shimla mirch, green chilli n adrak saute for 2 mins. add chopped tomatoes and all dry spices n cook till raw smell goes off. switchoff d flame n let it cool.
Grind the tomato mixture into a smooth paste. Heat butter in d same kadhahi add shimla mirch cubes saute for 2 mins add tamato paste n cook on low flame. in between in d mixer jar add soaked baadam with milk n a big piece of paneer (50 gm) n make smooth paste. Add this paste to tomato mixture when tomato mixture start leaving oil. mix well add water as needed. paneer cubes, cream n kasuri methi mix well. cook for 2-3 mins. in the last add 1 tsp honey..mix well garnish with hara dhaniya n serve with roti or naan. 😊

Method

Paneer 1 cup
khoya 1 cup
maida 2 tblspn
ilaychi powder 1 pinch
sugar powder 1 tsp
sugar syrup 1 taar ki

Method
grate paneer, khoya in big bowl. rub n mix with hands. add ilaychi powder, sugar powder n maida. mix well without any lumps. make small balls. n fry in medium hot oil till dark brown. soak in sugar syrup for 2-3 hrs. serve hot or cold.

It was too yumm. meri family ko kafi jyada pasand aayi. maine rose petals par rakh kar serve kiya h.

Soya paneer kebab

Ingredients:-
Soya nuggets (chura) 1/2 cup
Crumbled paneer 1/2 cup
1 boiled aalu
Hari Mirch 2
Hara dhaniya hand full
Pudina 1 tblspn
Adrak lehsun ka paste 1 tsp
Salt pepper as per taste
Amchur 2 tsp
Bhuna jeera 1/4 tsp
Garam masala 1 pinch
Lemon juice 1/2 tsp
Dry roasted n crushed poha
Oil for frying

Method:-
Mix all the ingredients except crushed poha. Make kebabs in desired shape. Wrap in crushed poha. Keep in the refrigerator for 15-20 mins. Deep fry or shallow fry. Serve hot.

Baked Bhujiya Roll

Ingredients
Maida 1 cup
Suji 1 tblspn
Salt pepper to taste
Oregano 1/4 tsp
Baking Powder 1 pinch
Oil for moin
Milk/water for kneading dough

For stuffing
Bhujiya 1 cup

Method:-
Knead a soft dough keep aside for 10 mins. Make 4 equal portions from the dough. Roll out in a thin roti shape. Apply little butter on it spread bhujiya. Cover n make a roll with very light hands. Seal with the water at the end tip. Cut in desired shape n bake @180 degree for 20-25 mins. Serve with chutney n pyaj.
You can store this in air tight jar for 10-15 days.

Ingredients
Suji 2 cups
Dahi 1 cup
Salt pepper as per taste
Chopped veggies 1 cup (onion,tomato, bellpeppers)
Grated Cheese 2 cubes
Pinch of Haldi (optinal)

Method:-
Suji me dahi, Namak, haldi aur kalimirch powder daal ke mix kare. Jarurat anusar pani daal kar ghaada ghol banaye. 10-15 mins rest k liye rakhe. In between mix all d veggies add salt pepper n catchup. After 15 mins better me 1/4 tsp soda daal k mix kare. Garam tave par 1 tblspn better daale. Ek saath 2-3 mini uttapam bana sakte h. Uttapam par thodi so veggies daale. Gas low flame pe kare aur 1 mins k liye uttapam thali Se dhak de. Thali hataye aur thoda sa oil daal kar dono taraf Se sek le. Veggies wali side grated cheese daale. Serve hot with mayo, chutney or catchup. :-)

Hii friends I am back with one more new interesting and easy recipe. Jo aap sabhi ko kafi pasand aayegi. Maine is dish me stuffing aaloo, paneer aur matar ki di h..aap apne according change kar sakte h or I suggest ki paneer onion ki stuffing jyada achhi lagegi. So let's start.

Suji Potato Rolls

Ingredients
Potato 6
Suji 3 tblspn
Adrak, hari mirch & hara dhaniya
Salt as per taste

For stuffing
Boiled aloo 1
Paneer 50 gms
Boiled matar 100 gms
Salt pepper as per taste

Method:-
Ek bowl me Kachhe aaloo ko chhil kar grate kare. Add suji, salt pepper n water n make batter. Keep aside. Ek pan me thoda sa ghee daal kar stuffing ki saare ingredients ko 2 mins cook kare.
Ek non stick tawa garam kare. Thoda sa batter daale. Dono taraf Se golden brown sek le. Ek taraf sauce ya chutney lagaye stuffing daale. Roll kare aur sarve hot wid chutney or catchup. :-)

Moong Daal Wraps

Hii friends aaj ki humari recipe kafi simple aur delicious hai.. It can be a ideal breakfast and a party snack too. Ise aap kisi bhi shape me bana sakte h. Maine ise ek wrap aur potli shape di h. Aap chahe to simple chilla ya dosa shape me rakh sakte hai. So lets start. :-)

Moong Daal Wraps

Ingredients:-
Yellow Moong daal 1 cup (soaked for 2-3 hrs)
Grated adrak
2 Hari Mirch
For stuffing
Finely chopped Onion 1
Finely chopped tamatar 1
Finely chopped shimla Mirch 1
Chopped paneer 50 gms
Grated Cheese 2 cubes
Salt pepper as per taste
Oil 2 tsp (optional)

Method:-
Grind moong daal, Hari Mirch n adrak into a fine paste. Add salt n little water. Mix well. Mix stuffing ingredients. Heat nonstick pan. pour small spoon full of batter in a small dosa shape. Dono taraf Se sek le. Stuffing daale grated cheese aur desired shape banaye. Serve hot with mayo, chutney or catchup. :-)

Carrot delight

Maine socha Ku naa is GAJAR k Halwe se kuch naya EXPERIMENT kiya Jaye. So Here is My Twist. Naam kuch socha nahi h..Aap log ise CARROT DELIGHT, SWEET SURPRISE Kuch b naam de sakte h.

Ingredients:-
Bread slices 8 pieces
1 bowl gajar ka halwa
2/3 cup sugar
Butter 1 tblspn
Butter paper

Method:-
Bread ki edges cut kare n belan se bread ko bel le. Keep aside. Gajar halwe ki leman size ki balls banaye. Geele haath se bread slice ko press kare usme Halwe ki ek ball rakhe aur momos ya modak shape me wrap kare. Isi tarah saare modak banaye. Ek nonstick pan me butter daale n saare modaks ko achhe she sek le. Keep aside.
Ab usi pan me sugar daal k caramelized kare. Switch off d flame sabhi modaks ko is caremal me achhe se coat kare n butter paper Rakhi tray pe rakhe. 3-4 mins fridge me set hone rakhe. Enjoy Carrot Delight crunchy out side and soft inside. :-)

Bajre Ke Laddu


सर्दी के मौसम में आयरन, कैल्सियम और फाइबर भरपूर बाजरा की रोटी ही नहीं, इसके लड्डू भी बहुत स्वाद और सेहत के लिये पसंद किये जाते हैं. स्वाद की गर्माहट के लिये गुड़ और बाजरे के आटे और गोंद मिलाकर बनाये हुये लड्डू आज ही बनाईये

आवश्यक सामग्री

बाजरे का आटा - 1.5 कप (200 ग्राम)गुड़ - 1 कप (250 ग्राम)घी - ½ कप ( 150 ग्राम)काजू - 10-12बादाम - 10-12गोंद - 2 टेबल स्पूननारियल - 2-3 टेबल स्पून (कद्दूकस किया हुआ)इलायची पाउडर - ½ छोटी चम्मच

विधि -

कढाई में आधा घी डालकर गरम कीजिये, हल्के गरम घी में गोंद डाल कर तलिये (गोंद को बिलकुल धीमी आग पर ही तलिये ताकि वह अन्दर तक अच्छी तरह भून जाए). गोंद के अच्छी तरह फूलने और सिकने के बाद प्लेट में निकाल लीजिए.

बचे हुये घी में बाजरे का आटा डालकर चमचे से लगातार चलाते हुए कलर चेंज होने तक भूनिये. आटे में से घी अलग होने लगे और उसमें से अच्छी महक आने लगे तो आटा भून कर तैयार हो जाता है. आटा भूनने में लगभग 15 मिनिट लग जाते हैं. आटा भून जाने पर इसे प्याले में निकाल लीजिए.

गुड़ को तोड़कर छोटे-छोटे टुकड़े कर लीजिये. कढ़ाई में गुड़ के टुकड़े डालिये और बिलकुल धीमी आग पर गुड़ को पिघला लीजिये, गुड़ पिघलने पर आग तुरन्त बन्द कर दीजिये.

बादाम और काजू को छोटा-छोटा काट लीजिये और भूने आटे में डाल दीजिए साथ में कद्दूकस किया हुआ नारियल, गोंद, इलायची पाउडर और पिघला हुआ गुड़ डालकर सभी चिजों को अच्छे से मिक्स कर लीजिए. लड्डू बनाने के लिए मिश्रण तैयार है.

मिश्रण से थोड़ा-थोड़ा मिश्रण उठाकर  मीडियम आकार के लड्डू बनाकर थाली में लगाइये. सारे लड्डू बनाकर तैयार कर लीजिये. इतने आटे से तकरीबन 10 -12 लड्डू बनकर के तैयार हो जाते हैं.

तैयार लड्डूओं को अच्छे से ठंडा हो जाने के बाद एअर टाइट कन्टेनर में भर कर रख लीजिये और जब भी आपका मन करे, 2-3 महिने तक कन्टेनर से लड्डू निकालिये और खाइये

सुझाव -

बाजरा लड्डू में आप गुड़ की जगह तगार, खाण्ड, बूरा, पाउडर चीनी किसी का भी इस्तेमाल कर सकते हैं.बाजरा के लड्डू में आप चाहें तो चिरोंजी या अपने मन पसन्द की मेवा मिला सकते हैं.

Recipe in English:-

Sieve millet flour in a bowl. Now coarsely crush the jaggery into small chunks. Chop almonds and cashews in small chunks. Heat some ghee in a wok. When ghee is sufficiently hot, add Gond into it (fry Gond on low flame so that its aptly cooked from inside). After Gond is aptly fried and puffy, drain it out on a plate. Then add millet flour in same wok with ghee and stir constantly to roast. Cook until there is slight change in color. When oil starts separating from the flour and it releases good aroma that means flour is aptly cooked. It takes 15 minutes for roasting flour. Transfer the roasted millet flour in another bowl. Place jaggery in wok and cook on low flame. Once jaggery is melted completely, turn off the flame. Add chopped cashews and almonds in roasted flour. Also add grated coconut, gond, cardamom powder and melted jaggery into it and mix all ingredients really well. Mixture for making ladoo is ready. Make a small lump from the mixture in your hands and bind to make a medium size ladoo. Place the ladoo over a plate and continue doing the same until the entire mixture is utilized. With this much mixture 10-12 ladoos can be prepared.

Serve this mouth-watering and delicious bajra atta ladoo as a dessert after meal or have it anytime in a day. Once ladoos cool down completely, place them in an airtight container and enjoy eating for upto 2-3 months.

Suggestions:

You can use tagar, khand, boora and powdered sugar instead of jaggery for making bajra ladoos.You can even add chironji or any other dry fruit as per your taste or desire.
